A fusilli made from sprouted moth beans and besan, bound with cluster bean powder and RO-treated water. Nothing else.
Moth bean — matki — is a hardy desert legume that rarely makes it into pasta. It gives the spiral a savoury, almost earthy depth and 12.5 g of protein per 100 g. The twist holds sauce properly.
Ingredients
Sprouted Moth Beans Flour, Besan (Gram Flour), Cluster Beans Powder (natural binder), RO-treated Water.
How to use
Boil in salted water until al dente, then drain and toss with a little oil or ghee.
The spiral holds thicker sauces well — a tomato-onion base or a coconut gravy both work.
Storage & shelf life
Store for 6–9 months in a cool, dry place away from sunlight. Reseal after opening.
