  • Sweet potato, cut into cubes 2 medium
  • Cooked chickpeas, patted dry 1½ cups
  • Kale, stems removed and torn 4 large leaves
  • Avocado, sliced 1
  • Red cabbage, shredded 1 cup
  • Tahini 3 tbsp
  • Lemons, juiced 2
  • Garlic, crushed 1 clove
  • Olive oil 4 tbsp
  • Ground cumin 1 tsp
  • Pumpkin seeds, toasted 3 tbsp
  • Salt and black pepper to taste

Method

  1. Roast the tray

    Toss the sweet potato and chickpeas with two tablespoons of olive oil, the cumin and salt, and roast at 210°C for twenty-five minutes until the edges caramelise.

  2. Toast and steam

    Dry-roast the Sprouted Foxtail Millet Rava for three minutes, pour over two cups of boiling salted water, cover and leave off the heat for eight minutes.

  3. Fork it loose

    Rake through with a fork and spread on a plate to cool slightly, so the grains stay separate rather than setting into a cake.

  4. Massage the kale

    Rub the torn kale with a teaspoon of olive oil, a pinch of salt and a squeeze of lemon for a full minute until it darkens and softens.

  5. Whisk the dressing

    Beat the tahini with the remaining lemon juice, garlic and olive oil, then loosen with cold water until it ribbons off the whisk.

  6. Compose, don't mix

    Spoon the millet into wide bowls and set the sweet potato, chickpeas, kale, cabbage and avocado in distinct sections on top.

  7. Dress and scatter

    Spoon the tahini over the centre, scatter the pumpkin seeds and finish with black pepper and a last squeeze of lemon.
