Cool, dense truffles of date paste and little millet flour rolled in cocoa and coconut, with cardamom and a flake of salt cutting the sweetness.

- Soft dates, pitted 250 g
- Cocoa powder 3 tbsp, plus 2 tbsp for rolling
- Almond butter 3 tbsp
- Desiccated coconut, for rolling 3 tbsp
- Cardamom powder ½ tsp
- Sea salt flakes ¼ tsp
- Boiling water 4 tbsp
Method

Hydrate the flour
Pour the boiling water over Sprouted Little Millet Flour and stir to a thick paste. Leave ten minutes off the heat — it swells and loses its raw edge without ever seeing a flame.

Break down the dates
Press the dates to a smooth paste with the heel of your hand or a few pulses in a processor. Any whole pieces left behind will make the truffles lumpy.

Combine the base
Work the date paste, almond butter and cocoa into the hydrated flour until the mixture is uniform, glossy and dark all through.

Season sharply
Fold in the cardamom and crush the sea salt flakes between your fingers as they go in. Salt is what keeps a date sweet from reading as flat.

Chill to handle
Refrigerate the mixture twenty minutes. Cold makes it stop sticking to your palms and lets you roll a tighter, rounder truffle.

Roll and coat
Shape into small balls, then roll half through cocoa and half through desiccated coconut for contrast on the plate.

Firm up cold
Return to the fridge for thirty minutes before serving. They keep ten days in a sealed box in the fridge.
Why this works
Nothing here is cooked: boiling water poured over the flour does the hydrating that a pan would otherwise do, and the dates supply both the sweetness and the binding. Little millet flour is the right choice because it is soft and pale, thickening the paste without adding the malty weight that ragi would bring against the cocoa.
