Sesame Jaggery Millet Ladoo

Til ladoo built on toasted jowar rava and popped sesame, bound with soft-ball jaggery and warmed with dry ginger — rolled hot, eaten cold.

Ingredients

  • White sesame seeds 1 cup
  • Jaggery, grated 200 g
  • Ghee 2 tbsp
  • Dry ginger powder ½ tsp
  • Cardamom powder ½ tsp
  • Salt a pinch

Method

  1. Pop the sesame

    Dry-roast the sesame over medium heat, shaking constantly, until the seeds start to pop and dance and turn a pale biscuit colour. Tip them out at once.

  2. Toast the rava

    Roast Sprouted Jowar Rava separately in the same pan for five minutes until sandy and fragrant, then cool both.

  3. Pound half

    Crush half the sesame coarsely in a mortar. The oil this releases is a real part of the binding, and it stops the ladoo shedding seeds as you roll.

  4. Cook to soft-ball

    Melt the jaggery with the ghee and two tablespoons of water and cook to 115C. A drop into cold water should gather into a soft, pliable ball — push it to hard-crack and you have chikki, not ladoo.

  5. Mix off the heat

    Kill the flame, tip in sesame, rava, dry ginger, cardamom and salt, and stir fast to coat everything evenly before the syrup begins to grip.

  6. Roll hot

    Protect your palms with a folded cloth and roll immediately. The mixture stops shaping the moment it cools, so work in quick, firm compressions.

  7. Rescue and set

    If it seizes, warm the pan for a few seconds to soften it again. Cool the finished ladoo completely before storing.

Why this works

Soft-ball jaggery holds just enough residual water to stay plastic for the two or three minutes you need to roll, then sets firm as it cools — the exact stage that makes a ladoo rather than a brittle. Crushing half the sesame releases oil that acts as a second binder, and toasted jowar rava adds a dry, sandy grain that keeps the ladoo from turning cloying.
