Ragi Chocolate Brownie

Ingredients

  • Dark chocolate, 70%, chopped 150 g
  • Butter 120 g
  • Eggs, at room temperature 2
  • Caster sugar 150 g
  • Cocoa powder 2 tbsp
  • Vanilla extract 1 tsp
  • Walnuts, broken ½ cup
  • Salt ½ tsp

Method

  1. Melt gently

    Melt the chocolate and butter over barely simmering water, pulling the bowl off while a few pieces are still whole and stirring them through the residual heat.

  2. Whip to ribbon

    Beat the eggs and sugar for three to four minutes until pale and thick enough to hold a falling ribbon. This dissolved sugar is what forms the shiny crackled top.

  3. Fold, do not beat

    Fold the warm chocolate into the eggs in three additions with a spatula. Knocking the air out now gives a flat, greasy brownie.

  4. Sift in the ragi

    Sift Sprouted Ragi Flour with the cocoa and salt over the batter and fold only until the last dry streak disappears. Ragi is thirsty and turns pasty if overworked.

  5. Underbake deliberately

    Bake at 180C for 22–25 minutes. Pull the tin when the centre still wobbles faintly and a skewer inserted two centimetres from the edge comes up with thick moist crumbs — never clean.

  6. Cool, then chill

    Cool completely in the tin, then refrigerate an hour before cutting. Warm brownie drags on the knife and loses its clean edge.

  7. Cut cleanly

    Dip the blade in hot water and wipe it dry between cuts for nine squares with sharp corners.

Why this works

Ragi mills far finer than wheat flour and absorbs more fat, so the batter needs a generous chocolate-and-butter base and a short bake to stay fudgy. Residual heat keeps cooking the centre for several minutes after the tin leaves the oven, which is why the wobble at the pull is not underdone but exactly right. The whipped egg-sugar foam does the lifting that gluten would normally handle.
