Seeded Millet Crackers

Craggy foxtail millet crackers packed with pumpkin, sunflower, flax and sesame, toasted until every seed is fragrant and the shard snaps.

Ingredients

Fresh

  • Pumpkin seeds 3 tbsp
  • Sunflower seeds 3 tbsp
  • Flaxseed, whole 2 tbsp
  • White sesame seeds 2 tbsp
  • Olive oil 3 tbsp
  • Flaky sea salt 1 tsp
  • Warm water about ⅔ cup

Method

  1. Bloom the flax

    Stir the flaxseed into three tablespoons of warm water and leave it ten minutes until it turns gelatinous. That gel is the binder holding this seed-heavy dough together.

  2. Combine dry

    Mix the Sprouted Foxtail Millet Flour with the pumpkin, sunflower and sesame seeds and half the salt so the seeds are evenly dispersed before hydration.

  3. Form the dough

    Work in the olive oil and the flax gel, then add warm water until you have a stiff, seed-studded dough that just holds when pressed.

  4. Roll firmly

    Roll between two sheets of baking paper, pressing hard so the seeds embed rather than tear the sheet. Aim for three millimetres — thicker than a plain cracker.

  5. Score and salt

    Score into irregular shards with a knife and sprinkle the remaining flaky salt over the surface.

  6. Bake low and long

    Bake at 175°C for twenty to twenty-two minutes until the seeds are toasted and the base is dry to the touch.

  7. Cool then break

    Cool completely on the tray before snapping along the score lines, so the shards break clean instead of crumbling.

Why this works

Foxtail millet flour holds structure better than the softer millet flours, which is what allows this much seed to be suspended without the cracker falling apart. Flaxseed gel is a hydrocolloid — it does the binding that egg or gluten would do elsewhere. A lower oven and longer bake dries the interior before the exposed seeds scorch.
