Foxtail millet sevai layered over a saffron-scented vegetable masala and steamed on dum, so every strand stays separate and perfumed.

- Onions, thinly sliced 2
- Carrot, batons 1
- Green beans, cut long 15
- Cauliflower florets 1 cup
- Green peas 1/2 cup
- Thick curd, whisked 1/2 cup
- Mint leaves 1/2 cup
- Coriander leaves 1/2 cup
- Green chillies, slit 3
- Ginger-garlic paste 1 1/2 tbsp
- Biryani masala 1 1/2 tbsp
- Bay leaf, cinnamon, cardamom, cloves 1 set
- Saffron soaked in warm milk 1 pinch in 3 tbsp
- Ghee 3 tbsp
- Oil 2 tbsp
- Salt 2 tsp
- Lemon 1/2
Method

Undercook the sevai
Boil the Sprouted Foxtail Millet Vermicelli for just 90 seconds — a shade under done — then drain, rinse under cold water and toss with a teaspoon of oil so it will not clump.

Brown the onions
Fry half the sliced onion in ghee until genuinely deep brown and crisp. Lift it out onto paper; this birista is most of the biryani's sweetness.

Bloom the whole spices
In the same fat add the bay, cinnamon, cardamom and cloves and wait until they sizzle and perfume the oil before the remaining onion goes in.

Cook the vegetables firm
Add ginger-garlic paste, chillies, then the vegetables and biryani masala. Cook only six minutes — they will steam further under the lid.

Fold in curd off-heat
Take the pan off the flame before stirring in the whisked curd, then return to low heat. Curd added to a hot pan splits and goes grainy.

Layer the pot
Spread the masala, then the sevai, then mint, coriander, birista and the saffron milk. Do not stir — layering is what keeps the strands intact.

Dum on low
Seal the pot with a tight lid, set it on a tawa over the lowest flame for 10 minutes, then rest 5 minutes before forking through gently and squeezing over lemon.
Why this works
Millet vermicelli has no gluten and turns to mush the moment it is over-hydrated, so it goes in deliberately underdone and finishes in trapped steam. Layering rather than stirring keeps the strands whole, while the saffron milk and fried onion carry aroma down through the pot as the steam rises.
