Little Millet Breakfast Bowl

Coconut millet porridge bowl with mango, toasted coconut flakes and curd swirl

Soft, gently sweet little millet cooked in coconut milk, crowned with mango, toasted coconut flakes and a spoon of thick curd.

Ingredients

  • Coconut milk 1 cup
  • Water 1 cup
  • Mango, diced 1
  • Coconut flakes, toasted 3 tbsp
  • Thick curd 4 tbsp
  • Cardamom powder ¼ tsp
  • Jaggery, grated 2 tsp
  • Sunflower seeds 1 tbsp
  • Salt a pinch

Method

  1. Toast briefly

    Warm the Sprouted Little Millet Rava in a dry pan for ninety seconds — it is fine-grained and colours quickly, so keep it moving.

  2. Cook in coconut

    Add the water first and bring to a simmer, then stir in the coconut milk. Coconut milk splits if it is boiled hard from the start.

  3. Simmer to soft

    Cook eight minutes on low, stirring, until the grains have swelled and the mixture is thick and glossy.

  4. Sweeten off-heat

    Take it off the flame and stir in the jaggery, cardamom and salt so the jaggery melts without catching.

  5. Toast the coconut

    Dry-toast the coconut flakes in a small pan until they turn gold at the edges. Watch them — they go from gold to burnt in seconds.

  6. Assemble the bowl

    Spoon the porridge into bowls, top with mango, curd, toasted coconut and sunflower seeds.

Why this works

Little millet rava is fine and quick to swell, so it thickens without long cooking and stays creamy. Adding water before the coconut milk keeps the emulsion stable and stops it splitting. Jaggery goes in off the heat because prolonged boiling turns its molasses notes bitter.
