Carrot multigrain pasta in a slow-cooked garlic cream loosened with pasta water, finished with parmesan, black pepper and a scatter of chives.

- Sprouted Carrot & Multigrain Millet Pasta 1 pack (200 g)
- Sprouted Ragi Conchiglie 1 pack
Fresh
- Garlic, thinly sliced 8 cloves
- Butter 3 tbsp
- Olive oil 1 tbsp
- Fresh cream 3/4 cup
- Milk 1/4 cup
- Parmesan, finely grated 50 g
- Black pepper, coarsely ground 1 tsp
- Chives, snipped 2 tbsp
- Salt to taste
Method

Sweat the garlic
Melt the butter with the olive oil over the lowest heat and cook the sliced garlic for eight minutes until soft, sweet and barely coloured. Browned garlic turns the sauce bitter.

Build the cream
Add the cream and milk, season, and simmer gently for three minutes. Do not let it boil hard or the sauce will split.

Boil carefully
Cook the pasta in salted water for five to seven minutes. The carrot colour fades in the pot and some pieces will break, since there is no maida holding them together.

Reserve the water
Scoop out a cup of the starchy cooking water before draining. You will need it to loosen the sauce at the end.

Melt in the cheese
Take the sauce off the heat and stir in the parmesan a handful at a time so it melts smoothly rather than seizing into strings.

Combine and loosen
Fold the drained pasta through the sauce, adding pasta water a splash at a time until it coats without pooling.

Pepper and chives
Grind over the black pepper, scatter the chives, and serve immediately while the sauce is still fluid.
Why this works
Cooking garlic slowly in fat converts its harsh sulphur compounds into something sweet and mellow, which is the whole flavour of this dish. Adding parmesan off the heat stops the proteins tightening and going grainy. Millet and legume pasta absorbs sauce faster than wheat, so the pasta water is not optional — it keeps the dish loose from pan to plate.
